The kneader is the basic equipment used for baking baked goods and pastries.
If you look at any sites selling such equipment, it will become clear that it can be of different types. Moreover, each type will differ in configuration, scope of use, price. If we consider a functional application, then dough mixer can be for yeast and for tough dough. The first type is also known as vertical, and the second is a horizontal kneader.
The design of the kneader is also different. A vertical mixer, also known as a planetary or spiral mixer, is designed so that the working container with the dough and the device itself, which provides the kneading, rotate together. Spiral kneaders are used to prepare yeast dough.
As for the horizontal one, this type includes a rotating device that provides mixing, as well as a bowl, which is stationary. The working device is similar to the Latin letter Z, which is why it is often called a Z-shaped kneader.
For kneading a tough dough, you can't do without such a horizontal kneader. You don't need to think that a kneader is the same as a mixer: the latter is not used to knead dough, except that it can be used to knead a very thin dough, say, biscuit.
Each store has refrigeration equipment . It is often referred to as built-in cold. This means that the device that provides freezing is located in the unit itself.
Refrigerating equipment includes chests, cabinets, showcases, bonnets - that is, all those devices that have a built-in cooling and freezing system. All of these devices are small in size, so they can be easily installed in any shopping pavilion or point.
Refrigeration equipment has its advantages:
- Low price compared to other equipment,
- No engineering required
- Do not carry out any installation, such as: do not lay routes for freon, do not install condensers or refrigerators,
- No need to look for a place to install the chiller
- If your business has to be closed, then this equipment is more liquid,
- If it needs to be moved, then you will not incur losses.
Of course, there are some drawbacks. For example, such equipment is expensive to maintain. This refers to the fact that maintenance should be carried out exclusively by professionals who have all the necessary skills.
